烟台街•烟台故事 | 福山大厨的一封家书：我在天津挺好的

center;"><br></p><p>这是一封寄自天津悦宾楼的信件（上图），收信人地址写明“胶东福山县西高疃集邮政局费神交兰（栾）家村”，贴用的是民国时期孙中山像加盖“华北人民邮政改做贰拾圆”邮票，销票邮戳是“天津赤峰道邮亭 卅八 七月十八”，即1949年7月18日。<br></p><p><br></p><p>天津于1949年1月15日解放，人民邮政来不及发行新的邮票，利用民国邮票加盖使用，邮戳也是延用的民国邮戳。<br></p><p><br></p><p>在集邮圈，天津赤峰道邮亭邮戳的知名度很高。</p><p><br></p><p>邮亭，是民国时期为方便大众用邮，在人流较多的地方设置的亭子，可以办理简单的邮政业务，类似于现在的报刊亭。赤峰道曾是当年的法租界所在地，先后有直、奉、皖十五位督军在此设有别墅私宅，著名的少帅府、瓷房子就位于此道。</p><p><br></p><p>解放后，人民邮政也延用了邮亭这一便民设施，烟台也曾设置有两个邮亭，分别使用“烟台亭1”、“烟台亭2”邮戳。</p><p><br></p><p>此信件主要内容为告知其表叔：二婶生子；表叔寄津的各种米面尚未收到，只收到玉米叶一种；另请“叔有暇尚希示教为盼”（下图）。</p><p><br></p><p style="text-align: center;"></p><p><br></p><p>引起我兴趣的并非这枚特别的邮亭邮戳，而是来信地址“天津悦宾楼王寄”。</p><p><br></p><p>大家都知道，福山乃鲁菜发源地之一，“东洋的女人西洋的楼，福山的大师傅（厨师）压全球”、“要想吃得好，围着福山跑”，这都是我打小耳熟能详的谚语。</p><p><br></p><p>当年，福山厨师为了养家糊口，靠厨艺闯荡海内外，以书信维系亲情联系，按理说应该留下不少往来信件，但我关注多年，这类信件却不易见到，而这枚天津悦宾楼寄来的信件，就与福山烹饪密切相关。</p><p><br></p><p>要说悦宾楼，就不得不先说登瀛楼。</p><p><br></p><p>登瀛楼饭庄是中华老字号企业，以经营鲁菜为主，是当年天津规模最大的饭店，已有一百多年历史。</p><p><br></p><p 14px;">旧时的天津登瀛楼饭庄。</span></p><p><br></p><p>1913年，蓬莱人苏振芝在繁华的天津南市建物大街开办了登瀛楼饭庄。“瀛洲”取自秦始皇本纪“海中有三神山，名曰蓬莱、方丈、瀛洲，仙人居之”，唐王李世民的文学馆取名“登瀛洲”，可见，以“登瀛楼”命名，既暗喻家乡地名，亦有文化内涵。</p><p><br></p><p>登瀛楼开办之初，建筑简易，店面不大，营业尚佳，但到了上世纪20年代，经营出现困难，又遭火灾，加之创办人年老体弱，无力经营，但几位股东雄心未泯，决意重筑新楼，在南市东兴大街新建了登瀛楼，由福山大王家人王桂任经理。</p><p><br></p><p>王桂，堪称登瀛楼发展历程中的转折性人物，由于他经营有方，使登瀛楼名震津门，先后开办“登瀛楼雅座”、“登瀛楼支店”两处分号。因生意兴隆，1939年又在法租界山东路开设“悦宾楼”新号，此信即寄自法租界的赤峰道邮亭。</p><p><br></p><p>这些饭庄的掌柜及当灶厨师，大多为福山人，有大王家、马家、潘家、下刘家、南张家、东吴家、八角等村人。</p><p><br></p><p>至此，登瀛楼共开设四个分号，有员工四百余人，经营高、中、低档菜品五百余种，加之严格的管理、精致的厨艺、精细的核算，登瀛楼克服重重困难、历经艰辛，营业收入一度占全市饭店业的四成之多，成为天津最大的饭店。</p><p><br></p><p>王桂病逝后，由其弟王梅继任，后由福山人栾希堂接任。王梅曾任“天津市旅饭业商会”总会长。图3就是当年位于南市东兴大街上的登瀛楼饭庄。</p><p><br></p><p>解放后，登瀛楼四个商号被收归国营，“文革”期间改名“井冈山食堂”，1973年恢复“登瀛楼”老字号，1984年原地重建，登瀛楼恢复了新的生机。</p><p><br></p><p>收件人所在的栾家村，位于福山城西南约10公里，有200余户，1958年修建门楼水库时，村子北移三百米。早年村里有厨师在外打拼，村中还出过两位知名人物：剧作家栾少山及其子漠雁（与人合作话剧《霓虹灯下的哨兵》）。</p><p><br></p><p>借助这样一封普普通通的家信，我们得以翻开一段尘封的历史，重温福山厨师名震津门的辉煌。</p><p><br></p><p
